Super veg Cavolo Nero is currently in the midst of it’s Glory Days, we’ve tried it, fried it and loved it a thousand times over but now we look to r r r roasting - and boy she’s a winner. There’s nothing more criminal than an overdone, soggy and bland bit of veg, for the something so green it’s important to lock in as much g o o d n e s s as possible.
So, to add this new staple to your Sunday roast simply separate the stems, lay out of a baking tray and massage with a light douse of olive oil,
Season with a bit of rock salt
Crisp up in the oven at 190c for 15 minutes turning half way through - c’est voila.
The best thing? It’s packed with antioxidants and pretty much every vitamin and mineral your winter skin is craving ( lutein, vitamins A, C, K, fibre, calcium, manganese and iron ) .
