Prosciutto Canape? Shante You Stay.


When you think of canapes, what comes to mind….I bet we can guess in three . 1) Smoked salmon cream cheese belini….2) Devilled eggs….3) Mini Yorkshires, roast beef & horseradish.

Sorry, but s n o r e - all very delicious but equally overdone. Move over quintessential canapes it’s time for something simple that won’t cost the earth and will go just as well with the twelve glasses of champagne we hope you’ll knock back.

These sweet potato, whipped goats cheese, prosciutto, thyme and honey rounds were built to please and can be made so quickly that you’ll have more time to check yourself rather than the kitchen. Cheers to that!

For a party of 12 you will need…

  • 4 medium sized sweet potatoes, sliced into 1cm rounds (don’t choose potatoes that are too round in the middle as you want guests to be able to pick up nice and simply.

  • 2 packs of soft goats cheese….if you can source locally even better (Chillies Farm Willows soft is best for those in Sussex).

  • 1 pack of prosciutto, parma ham or similar

  • Few sprigs of thyme from the garden

  • A small handful of walnuts

  • Honey

To make, pour yourself a glass or three and simply follow the below:

  1. Get that oven on fan and heating at 220c

  2. Slice sweet potato into 1cm rounds, brush both sides with olive oil and bake on each side for 15 minutes until nice and crisp.

  3. Spread goats cheese on each disc , leaving a little of the sweet potato exposed so you can see the gorgeous color and makes it easier to hold

  4. Fold a strip of torn parma ham or prosciutto and press gently on to the goats cheese

  5. Nestle half a walnut in between the fold of the ham, drizzle honey across each disc in a zig zag motion and then top simply with a small 1cm sprig of thyme
