If you’re not familiar with Chicory buddy up with him because he can elevate your salad from street style to i haven’t seen this before for a £/$ extra.

Packing extra crunch & a very v e l v e t y texture this leaf knows how to tie up a salad nicely, not to mention the garlic cream cheese dressing we serve it with it..agh, heaven!

Steps are simple as always but you might need to look at shelves in the supermarket you usually give a miss!

Seven ingredients; spinach, fennel, pomegranate seeds, chicory, Boursin (or another garlic cheese), natural yoghurt, lemon juice.

To make:

  1. Find a beautiful plate that you’ve kept in storage or a safe place, it’s time to show it off!

  2. Chop the fennel into 1/4s & then slice each quarter into thin strips - using as much or as little as you would like. Douse with the juice of 1\2 lemon

  3. Mix the fennel with the spinach leaves & the separated chicory leaves

  4. For the dressing, combine 1/2 pack of Boursin with five tbsp of natural yoghurt & the juice of 1/2 lemon - the consistency should be fairly thick

  5. Dollop the dressing strategically over the salad , trying to catch each chicory leaf & garnish with freshly torn dill & pomegranate seeds
