S m o o t h Style Avocado Salad

Laid back sides with a little oh yes please. This looks a little fancy but we can promise you it’s very easy to make and plate, no Michelin star necessary. To get you in the s m o o t h mood all you’ll need is:

Eight ingredients: x2 avocado, chopped spring onion, thinly sliced radishes, halved & quartered baby tomatoes, crumbled feta cheese, torn mint, pomegranate & natural yoghurt

To Make:

  1. Serving dish wise we like to go with a long wooden board but equally a curved pasta bowl or plate work beautifully.

  2. Start by blitzing your avocado with the juice of 1/2 lemon & 2 tbsp of natural yoghurt in a Nutri bullet or something similar until smooth with no lumps.

  3. Spoon the avocado onto your serving board and smooth with a knife, doesn’t have to look neat.

  4. Take handfuls of all of your chopped and diced ingredients and cover the avocado, leaving the edges visible.
