Err, this has to be one of the most simple winter dessert recipes going - the type of apple pie that requires minimal effort giving you s o o much more time to enjoy with friends or to nurse that hangover. So, controversial but for this babe we just went with the pre-made just-roll shortcrust pastry, a lot of our readers are fulltime working gals / guys and honestly as delicious as homemade pastry is - it’s a time consumer. Start to finish prep time was 10 minutes max, no dishes to wash up - bonus. Enjoy whilst binging a new series, Selling Sunset on Netflix is our new guilty pleasure.
Six Ingredients: 1 pack pre-made shortcrust pastry, 3 apples - we l o v e Granny Smith but Pink Ladies or Bramley work equally well, 2tbsp cinnamon, 2 tbsp demerara or brown sugar, egg yolk, unsalted butter
Line a baking tray with baking paper & whack up the oven to 190c
Roll your dough into a ball and place on baking paper - use a rolling pin (or bottle of red in our case) to roll into a circle, edges don’t have to be neat
Press and remove a 20cm cake tin lightly onto the dough so you can see the outline and then use the outline as a guide to where the filling will go
For the filling core & thinly slice the apples - as thin as you can go. Group the slices into four and slide them out into a fan position. Use the slices to cover the circular area on the pastry, in rotation starting from the inside out.
Sprinkle 2 / 3 of the sugar and cinnamon over the apples and pastry
Fold the edges of the dough over the apples, gently sealing any overlaps. Brush the crust with the egg wash, and sprinkle with the remaining sugar & cinnamon.
Bake for 35 minutes until golden, steaming - dust with icing sugar and then enjoy with a few giant scoops of ice cream - coconut was our go to.
